SANTE FE NACHOS
3/4 lb. ground round / chuck (1) 14 1/2 oz can of petite cut diced tomatoes, undrained (1) 14 1/2 oz can of whole kernel corn, drained 1 cup canned black beans, drained 1 tbsp chili powder 8 oz tortilla chips 2 cups shredded Monterey Jack Cheese
Brown meat, drain. Stir in tomatoes, beans, corn and chili powder. Cook 3 minutes or until liquid is gone. Arrange chips on baking sheet, spread with mixture and top with cheese. Bake 400 degrees until cheese melts. Top with Red Cactus Salsa.
