Grilled Chicken Fresh Mex Bowl

The Grilled Chicken Fresh Mex Bowl features Red Cactus seasoned grilled chicken, home-made corn and black bean salsa, Red Cactus Salsa and rice, layered with cheddar cheese, pico de gallo, fresh field greens, chopped cilantro, tortilla strips, sliced avocado, and a drizzle of cumin-lime sour cream. The chicken can be substituted for grilled shrimp or steak.

What is a fresh mex or burrito bowl?
A burrito bowl is all of your favorite burrito fillings minus the tortilla. Burrito bowls are typically served over rice, or if you’re looking to cut down on your carbs, you can serve your toppings on a bed of shredded romaine lettuce.

We recently read an article in the New York Times about how bowls are becoming much more common at dinner, and it just makes sense. They can pack a lot in, they can be used for just about anything, they’re more couch-friendly than a plate, and many foods often look better in a bowl then they do piled on a plate.

This burrito bowl is more of a copy cat of Chili’s Chipotle Tex Mex Bowl, with a few alterations, but these bowls are so versatile. You can remove or add almost any ingredient and never get bored.

What you’ll need: 

  • 2 tablespoons Red Cactus Seasoning
  • 1/4 jar Red Cactus Jalapeños  (optional)
  • One boneless skinless chicken breast
  • dash if salt and pepper
  • 2 tbsp. finely chopped cilantro
  • 3 tbsp. lime juice
  • 1/4 tsp. ground cumin
  • 3 tbsp. pico de gallo
  • 3 tbsp. canned black beans, drained and rinsed
  • 3 tbsp. frozen sweet corn kernels, thawed
  • 1-2 tbsp. sour cream
  •  1 1/2 tsp. chopped chipotle pepper
  • 1 cup chopped lettuce or fresh greens
  • 1/2 oz. sliced avocado
  • 1/2 cup rice
  • 2 tbsp. shredded cheese
  • crunchy tortilla strips, or tortilla chips
  • Red Cactus Salsa
  • Red Cactus Cheese Dip or Red Cactus Queso 

INSTRUCTIONS

Season chicken with Red Cactus Seasoning, salt and pepper, and place in wide medium bowl. Add 1 tbsp. each cilantro and lime juice. Flip chicken to coat.

Meanwhile, make the dressing: In a small bowl, combine sour cream, cumin, and 1 tsp. lime juice. Mix well, and refrigerate.

Cook rice, or substitute with quinoa.

To make the next layer, in a medium bowl, combine pico de gallo, black beans, corn, and chipotle pepper. Add remaining 1 tbsp. cilantro and 1 tsp. lime juice. Mix well, and refrigerate.

Bring a grill pan (or skillet) sprayed with nonstick spray to medium heat. Add chicken. Cook for about 5 minutes per side, until cooked through. Once cool enough to handle, slice into strips.

Place lettuce in a medium bowl. Top with Red Cactus salsa, chicken, pico/bean/corn mixture, avocado, and cheese. Drizzle with dressing (or serve dressing on the side). Top with crushed chips.
