Tailgating Salsa Recipes
Buffalo-Chicken Dip with Salsa
Ingredients:
- 12 oz. precooked chicken pieces
- 2- 8oz. packages cream cheese. Leave out to get to room temperature
- ½ cup Frank’s hot sauce
- 2-3 tbs. Butter
- 1 cup of your favorite Red Cactus salsa
- ½ cup ranch dressing
- ½ cup blue cheese crumble
- 1 ½ cups shredded cheddar cheese
- Garnish with chopped green onion
- Tortilla chips for serving
Instructions:
- Preheat oven to 350º
- In a small saucepan, heat hot sauce and mix in butter
- In a mixing bowl, add remaining ingredients and mix with your hands. Add hot sauce after it cools. Reserve ½ cup cheddar
- Spread mixture in oven-safe dish
- Top with remaining cheddar
- Bake for 30 minutes until cheese has melted and crust forms

- 4-5 sweet potatoes, cooked and mashed.
- 2 large bags of spinach
- 3 cups shredded monterey-jack cheese
- 3 cups enchilada sauce

Instructions:
- Preheat oven to 400º
- In a deep casserole dish, place a layer of corn tortillas, overlapping to cover the bottom like a lasagna
- Beginning with spinach, begin to layer the pie
- Add half of the monterey-jack cheese
- Add layer of corn tortillas
- Add layer of Red Cactus Salsa
- Add mashed sweet potatoes
- Add corn tortillas
- Add enchilada sauce
- Top with remaining cheese
- Cover container with plastic wrap followed by foil
- Cook for an hour or more, depending on thickness. It’s hard to overcook this dish.
